It is an isomer of glucose. It is present in large quantities in the juice and honey of fruits in a free state and can be combined with glucose to produce sucrose. Fructose is the sweetest monosaccharide, which is widely used in the production of food, medicine and health products.
Determination principle : Firstly, DNS is used to determine the reducing sugar content to determine the dilution multiple of subsequent determination, and then the glucose content canbe determined. Sucrose and fructose are determined by enzymatic method using glucose-eliminated samples.
